Irish Whiskey Regular malt is gently dried in a kiln from green to brown with low heat to stop the germination process and keep the starch and enzymes intact for the mash tun soaking (which converts the starch into sugar for alcohol production.) Crystal malting uses a higher heat early in the kilning process that essentially steams and cooks the grain and thus converts the starch into sugars while still inside the barleycorns. This creates very sweet malt that produces little alcohol but loads of yummy flavor. Many brew masters use it because it creates a good head on a glass of brew. It is hard to produce well and much more expensive than regular malt.
